Quinoa Salad

  • 2 cups of quinoa
  • 4 cups of water
  • 1 bunch of parsley
  • 1 green onion chopped
  • 1 cup of boiled chickpeas
  • 1 cup of pomegranate seeds
  • 1 chopped tomato
  • 1/4 cup of roasted pine nuts
  • 1/2 cup of olive oil
  • 1/4 cup of lemon juice
  • 1/4 cup of balsamic vinegar
  • Salt and pepper


  • Mix all dressing ingredients and place aside.
  • Boil the water in a pot and add the quinoa and cover.
  • Stir occasionally until cooked. Let cool.
  • Place parsley in Philips onion chef and chop.
  • Place the cooked and cooled quinoa in a bowl. Add the parsley, tomatoes, green onions, chickpeas, pine nuts and pomegranate seeds.
  • Add dressing and mix well.
  • Keep in fridge until serving.
