Carrots and Ginger Soup

Servings 8

Ingredients

  • 6 Medium carrots chopped
  • 2 Tablespoons Vegetable Oil
  • 1 Medium onion chopped
  • 4 Cloves of chopped garlic
  • 1 Tablespoon of grated ginger
  • 1 Teaspoon of curry powder
  • 1 1/2 Litres of chicken stock
  • 1 Teaspoon of five spice mix
  • 1/4 Cup of fresh cream (optional)
  • 1/4 Cup of sliced green onions or chopped parsley for garnish
  • Salt and pepper (according to taste)

Directions

  • Heat oil in saucepan, add the onions and cook until soft, add the garlic and stir.
  • Add the carrots and the five spice mix, salt, pepper, curry powder and the grated ginger. Mix well.
  • Add the stock and let simmer for 30 minutes (until carrots are tender).
  • Blend soup using Philips immersion blender or in regular blender. (Return to pot if using regular blender)
  • Add the fresh cream.
  • Garnish with chopped parsley or green onions and serve hot.
