Take your sandwich game to the next level with our recipe for tasty homemade bagels. These New York-style bagels have a unique texture achieved by boiling the dough before baking. This gives them their signature chewiness and crispy crust with a soft interior. With the Kitchen machine doing all the kneading and our step-by-step guide, you’ll get beautiful bagels from the first try. Tip: Use Manitoba flour for this recipe, as it's high gluten content will allow you to obtain a soft and elastic dough that is easy to work with and will give you best final result.

Ingredients

  • 440 g Manitoba flour
  • 7 g dry yeast
  • 20 g sugar
  • 6 g salt
  • 300 mL lukewarm water
  • 1 egg
  • 1 tbs water
  • 3 tbsp sesame seeds

  • Step 1: Add the flour, yeast, sugar, salt and water to the Kitchen machine bowl, attach the dough hook and start the device on speed 1 for 30 seconds. Switch to speed 2 for 1 minute and then continue on speed 3 for 6-7 minutes or until a smooth elastic dough forms. Once done, cover the bowl with a damp kitchen towel and let rise at room temperature for 1 hour or until it doubles in size.

  • Step 2: Punch down the dough and transfer it onto a lightly greased work surface. Divide the dough into 8 pieces and shape each into a ball by pinching and forming a seam. Place the ball seam-side down on the work surface and swirl it around while maintaining constant contact. Put them on a baking sheet, cover with a damp kitchen towel and let rest for 10 minutes.

  • Step 3: Once rested, take a dough ball and press a floured finger through the center to make a hole. Twirl it around two fingers lightly, pulling and stretching it apart to widen the hole. Repeat with the remaining balls. Tip:The hole should be as wide as the sides.

  • Step 4: Bring a large pot of water to a boil. Drop the bagels in one at a time and gently boil them for about 1 minute per side. Drain the bagels using a slotted spoon and place them on a parchment-lined baking sheet. Whisk the egg with water. Brush the bagels with the prepared egg wash and sprinkle with sesame seeds.

  • Step 5: Oven: Bake the bagels in the preheated oven at 220°C for 16 minutes. Airfryer: For an XXL Airfryer, bake the bagels at 160°C for 13 minutes. Bake in 2 batches. Once baked, let the bagels cool completely before serving.
